I do this occasionally with whatever cheese I have on hand - today it was sliced American and shredded Monterey jack. I love how easy, quick, and versatile this is. Thanks for posting!
Five stars for ease and pure simplicity! Loved it with the whole wheat tortilla - has a kind of sweetness that was great with the mozzarella. I dipped mine in salsa and really enjoyed this quickie lunch - thanks for posting the recipe! Made for Fall PAC 2009
