Yum! I didn't use roasted peppers but sauteed them instead. Very good. Amazing how the flavors worked so well together. I didn't have fresh herbs-- used dried during the saute. I bet this would be good for an appetizer using corn chips instead of tortilla's. Very good. Thanks!

Delicious and so easy to make. The only thing I did differently was to use fresh garlic. I will definately be making these again.

Fabuloso!! Magnifico! LOL--but it's true. This is a wonderful recipe. I admit it was even better since I got all the herbs from plants growing outside the kitchen door--but Toni, this is superb! I did go with Chihuahua cheese (Mexican, I know--not Spanish) because we are not major goat cheese fans--but the peppers in that marinade are just perfect. A new addiction!! Thanks so much for a great recipe!

Absolutely fabulous! Served to DH for a snack during the first football weekend of the year. These would make a great party appetizer. Easy and wonderful tasting. I used little 6 inch tortillas and was able to make 8 total. Cut them into quarters and had the perfect appetizer. Loved the crispness of the broiled quesadilla and the vinegar and thyme was wonderful with the peppers. Used red and yellow peppers for color. Thanks Toni, this is a winner.
