  • Cut peppers in half lengthwise, remove seeds.
  • Cook 5 minutes in boiling water.
  • Drain.
  • Sauté celery, onion, and garlic in butter until tender.
  • Remove from pan.
  • Brown ground beef in same skillet.
  • Stir in sautéed vegetables, beans and barbecue sauce.
  • Fill peppers.
  • Place in shallow baking dish.
  • Bake at 350°F for 20 minutes.
  • Top with cheese.
  • Bake 10 minutes more.

  1. Another winner of a recipe from Mimi Bobeck! These were very, very tasty - the peppers were extremely tender but not soggy. I think the trick was the parboiling before filling, followed by a shorter cooking time in the oven than other stuffed pepper recipes I'd tried previously. I thought the filling was also delicious - and unique. I had never thought to include beans & BBQ sauce in stuffed pepepr filling before and really enjoyed the flavor. These also looked great. Thanks!

  3. Not quite as good as I thought it would be, but I used rice instead of beans like the other reviewer and used ground turkey instead of beef. Will try it again with the beans and beef.

  5. These are really tasty!! I have never been a fan of Stuffed peppers. But these are great! The barbeque sauce and baked beans give it a little sweetness!! Yummy! Thanks for sharing. This recipe is definitely a keeper!

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
