I've made this the last couple of years for Christmas Eve, since it was just my boyfriend and myself. So yummy with a good white wine and filling and festive for a little holiday for two! This year the boyfriend is out of the picture, but my new roommate works at a very high end cheese store, so we're going to do the same with a really tasty raw-milk white cheddar. I'm also thinking about trying it with cream cheese subbed for the sour cream and add lots of green onions as I have in the past. I love to cook with beer!
