Best Chicken Broccoli Casserole Ever

"My friend Kevin made this one night for his own dinner. About 5 or 6 people then wandered into his house around dinnertime and demanded "just a taste". Kevin had to go to McDonald's because we ate all his supper! Although I am not a fan of soup food in general, this is one of the best incarnations of the genre I have ever seen! Bring on the can opener and enjoy!"

  • Preheat oven to 450 degrees F.
  • Mix SAUCE ingredients together in a large bowl.
  • In a lasagna pan, layer ingredients as follows: Chicken and broccoli, Sauce, Cheese and croutons.
  • Repeat these layers, finishing with cheese and croutons on top, until pan is filled.
  • Bake 1 1/2 hours.
  • You may have to cover the top toward the end to keep the croutons on top from getting too brown.

  1. This was so good! I made the sauce in the morning cutting the curry powder by half (we like just a hint of curry). At supper time, I assembled the dish and baked it. Quick, easy and very flavorful. Thank you Amy, for a wonderful meal!!!! :-)

  3. I followed the directions to the letter; 450 degrees is too hot for 1.5 hrs. Too many croutons soaked up the sauce. Taste was not the best.
     
  4. This was very flavorful. I halved the recipe and used 3 chicken breasts and one can of cheddar soup. I also just realized that I added cheddar to the sauce but did not layer on extra grated cheese. It seemed cheesy enough anyway. I also used only 1 tsp. curry powder which was enough for our taste. Since I reduced the recipe I just made one layer of everything. Put Italian bread crumbs on top because I did not have croutons and that was fine too. I will definitely make this again!
     
  5. Hubbie enjoyed this, which means, I will make it again. Didn't have the broccoli cheese soup, used golden mushroom. Still worked out fine, cheesy because of the addition of the grated cheese.

I live in Florida with my mother and my daughter. I stay at home, so I have time to really get into cooking. I grew up cooking for my mom and my brother, and they both say I am one of the better home cooks they've met! But since my mom's idea of cooking is opening soup cans and my brother lives in NYC and eats out a lot, that may not be saying much! I am one of those people who reads cookbooks just for fun, even when I am not looking for a recipe. My favorite cookbook is "The American Woman's Cookbook" from 1930-something. My grandmother had a copy of it, and my mom found a copy for herself years ago (updated for the 1960's) and she gave me that copy when I moved out on my own. I like it more than "modern" cookbooks because it has actual recipes in it; not just heat and eat steps! When your recipe requires you to use your can opener and packet opening scissors more than your knife and spice cabinet, something is wrong! Right now, I am trying to learn to cook the cuisines of Asia, mostly India and Vietnam. I am also trying to learn to bake bread. My mom may not be able to cook without Campbell's soup, but she can bake homemade bread like no one else!
