Broccoli Cheddar Casserole

  • In large skillet, melt butter over medium heat.
  • Saute broccoli and onion for 5 minutes, or until crisp tender.
  • In a bowl, add eggs, cream, and 1 3/4 cups of the cheddar cheese, and mix well.
  • Add broccoli, salt, and pepper to the egg mixture.
  • Pour into a greased 3 quart casserole dish; set casserole inside of a larger dish, and pour 1 inch of water into the larger dish to make a water bath.
  • Bake at 350 degrees for 45 to 50 minutes or until a knife inserted in the center comes out clean.
  • Sprinkle with remaining cheese, and allow casserole to sit for 10 minutes before serving.

  1. Very good casserole. I added a couple of cloves of garlic to the onion as I sauteed it and if I make this again I think I will add a bit more to boost the flavour. Maybe add some parmesan or asiago cheese with the cheddar, too. This is very reminiscent of a canape recipe that used to be popular - spinach squares. If you made this thinner and with finely chopped broccoli, it could be cut in squares like that and served as finger food. Everyone seemed to enjoy it and my only hesitation in giving it five stars is whether it is worth all the fat and calories. That said, it was well worth making. Thanks.
     
  2. Served this for Thanksgiving dinner for 6 -- will repeat tonight. I, too, did not bake in water bath, and did saute the broccoli a good while. Due to all the other food serving going on, I think the custard got a tad overdone, but was still very tasty. It was different from other holiday green dishes and everyone enjoyed it. I will surely make this again - and will try the bain marie method, when I have oven space. Thanks for sharing, TGirl.
     
  3. I've been growing tired of plain, steamed broccoli so I was very excited when I came across your recipe. I have to say that this is the best broccoli dish I've had. Everyone loved it, even those in my family who don't really like broccoli. I will make this over and over again. The only changes I made were halving the recipe and baking the casserole without submerging the dish in water to bake. I just baked it like any other casserole. We had this with roasted chicken. Thanks again for the great recipe! It was nice to find one without some kind of condensed soup in it.

  5. This was very good! I halved the recipe. Make sure you cook the broccoli till it is somewhat tender, cause I didn't, and once I baked mine, it was still not quite done enough. The flavor was wonderful! Thanks, TGirl, I made this for your cookathon. Get well soon!
