      Grate cheese, add butter and allow butter and cheese to reach room temp.

      Add cayenne pepper (careful its hot) and flour, and work together with hands until well blended.

      Put dough through a cookie press in desired shapes and bake on ungreased cookie sheet at 375 degrees for 10-12 minutes.

      They were great, and very easy to make. I added a little salt, too. I mixed the dough in a food processer, and added 2T water at the end to get a more workable dough. Not having a cookie press, I pressed the dough out onto wax paper and cut it into thin strips with a pizza cutter.

      I found the dough difficult to work with, the butter perhaps softened too much. I had to refrigerate the dough to be able to roll it. Didn't find the resulting straws to be that light, and it took quite a bit longer for them to cook. Perhaps working with a cookie press makes all the difference?

      These are one of my favorite snacks and I made them this holiday season to accompany the bottles of wine we gave as gifts. Be warned %u2013 it is time consuming but well worth it. This recipe is very good just like it is; although on my second batch I added a few sloshes of beer %u2013 not only for the leavening factor, but it went through my pastry press more easily. We like a little %u201Ckick%u201D, so I also added ½ tsp. ground mustard and upped the cayenne by ¼ tsp. Next time, I might add ½ tsp. garlic powder too. Using good quality sharp cheddar cheese is key, and my KitchenAid w/dough hook worked great.
