      This is a very interesting dish! There is a good balance between rice, carrots, and cheese (no one ingredient dominates) creating a light flavorful dish. I think I might add an extra tablespoon of minced onion next time as I couldn't detect the onion in this dish. The color of the finished dish is really beautiful with the orange flecks throught the rice (more orange than golden in color). Note that this is not an overly cheesy dish as there is a nice balance with all the ingredients - not like cheesy in macaroni and cheese. Definitely not a dish for those that are not fond of carrots!

      Without a doubt, this is a 5-star recipe. Both my picky eaters (husband and four-year-old daughter) loved this side dish and asked for seconds. I think it could easily be converted to a main dish by adding some left over chopped chicken or beef. Yummy.

      This was a beauty, so simple, yet so tasty. This recipe could be played with - it has a lot of scope for experimenting. Next time around I will throw in some spinach.

      This dish is surprisingly not overly cheesy or carroty. And my toddler liked it, both in helping me make the thing and in eating the finished product. Good comfort food. I used mozzarella cheese and brown rice which worked well. This recipe gets to stay in my cookbook.

      My family really enjoyed this, which is surprsing because my husband really does not like rice. It was the perfect balance of rice and carrot. Thanks for posting we will be eating this one again.

      This is a simple, tasy recipe. I substituted one cup of grated carrot for a cup of grated zucchini. Makes a good side dish and reheats well. Like other reviews I would probably double the onions and seasoning next time. Mine took about 1 hour and 40 minutes, using a deep round casserole dish.

      Oh yum! This was the perfect comfort food side dish to the marinated chicken that we made the other night. I doubled the recipe, but I didn't have enough carrot, so I did half carrot and half zuccini - it was excellent! Thank you so much Mirj!

      Great! I didn't have carrot, so tried it with a big ol' squash instead. I just grated the squash flesh and used it just as the recipe called for carrot. As others have said - good blend of tastes! Oh, I also increased the onion flakes. It only took about 45 minutes to be done.

      Another winner from Mirjam! This makes a very tasty side dish. I halved the recipe for us. Next time I'll experiment with some herbs or spices for extra flavour. Very good!
