      I added a little extra picante sauce. I may substitute the Mayo for cream cheese next time. I also added extra cheese. Needs a little heat, so I may add a little Jalapeno next time too.

      Amendment Jan 2011: So I figured out the BEST combo for a quesadilla. black beans, corn, cheese, chicken, Sazon Mexican Spice blend, and chipotle powder. seriously the best ever...

      Excellent recipe! Leary about the mayo before trying the final product but turned out great. Only modification I made was reducing the corn to 1/2 cup and adding 1/2 cup of diced chicken. Kids enjoyed them too.

      I really liked this as posted! The things that I feel would take it over the top is to add some fresh cilantro and some diced jalapeno. I will reduce the sauce I put on each tortilla next time because it was just a little runny, but I used smaller tortillas and thought I'd rationed everything out right. Great quick and easy lunch or weeknight recipe. Thanks for sharing!

      Excellent! I love quesadillas and these were delicious. Used 2 chopped chipotle chilies and adobo sauce instead of salsa and left out the mayo (for calories sake). Also broiled them only because I didn't feel like washing the big pan. This will be a new stand-by since I always have these ingredients on hand. Thanks!

      I tried the recipe just as it was and the family gave it RAVE reviews. Every time I try to cook Mexican foods, I screw it up royally, but this was wonderful. Great compliment to homemade margaritas. I might add more cheese or try a different type of tortilla, next time. The ones I used weren't quite stiff enough and they were messy...but none of us cared they were so good. Such a wonderful, warm recipe. This sounded so simple I had a hard time believing it was going to be as good as it was, but it was absolutely perfect.

      Delicious! I've made these several times now, they make a great quick lunch or snack. I personally prefer them with a little extra salsa and no mayo.

      Yum, these were good. I used light miracle whip and low fat cheese. I loved them as written but think next time I might try using cream cheese instead of mayo. :) Thanks for a keeper!

      Really good! Made with chicken tortilla soup. I put a little margarine on the outside of the tortillas, and an extra sprinkling of jack cheese on the inside. Very very good!!! Didn't need any guacamole or sour cream. Great straight up! Made for ZWT 5.

      These were great as part of my Mexican feast tonight. I must admit when I think Mexican, I don't normally think of mayonnaise, but it works very well in this recipe. I used flour tortillas since that was what I had on hand, but other than that, followed the recipe as written. Made for ZWT5.

      These were spectacular! I served them up as an appetizer to dinner tonight and they were gone in no time! I was a little worried about the mayo taste but after it was cooked I couldn't even taste it. They were beyond excellent. I used plain flour tortillas and followed the recipe exactly. I can't recommend this enough! Made for ZWT 5 and so glad I did!!

      This made a great lunch yesterday! Followed Enjolinfam's suggestion and cut back on the mayo a little. Monterey Jack cheese wasn't available so used cheddar. Because whole wheat tortillas are not available here in Mexico I used harina (flour) tortillas. Rather than folding them in half, I warmed one side on the grill, turned over, spread the filling and topped with another tortilla. Cut into quarters with pizza cutter. Thanks for sharing!

      Delicious and easy! I used low-fat mayo and added some pepperjack cheese for a little extra kick, and whipped up some guacamole to serve with it. Excellent! Thanks for sharing!

      I made this for lunch yesterday and added some leftover chicken to make it a bit more filling. I used miracle whip to keep it a bit lighter. This made a great quick and easy lunch, dinner, or snack!

      Yum! Quesadillas are one of my all time favorite snacks, and I loved this new way of eating them. I used half pepper jack cheese and half cheddar cheese and a tad less mayo (maybe 1/3 cup) because that's what I had. They were really terrific! Thanks Boomette! Made for 1-2-3 Zaar Tag.

      I used my quesadilla maker for these so the cooking part was a snap! Black beans and corn are a wonderful combination and its no different here. I added just a touch more cheese, lol!

      This is a delicious and easy to make quesadilla. Great for light dinner or lunch paired with a fruit salad. I added a little extra cheese to make them a little gooey, otherwise just as posted.
