  • In a saucepan, saute onion and pimentos in butter for 5 to 7 minutes.
  • Blend in flour.
  • Add stock and cream.
  • Cook until thick.
  • Add cheese and stir until melted.
  • Add 1/4 cup green onions, salt and pepper, to taste, and cayenne if desired.
  • Garnish with remaining green onions.

  2. This was very good although I used low fat milk instead of cream. It still tasted rich and creamy. Garlic croutons were a great addition.
     
  3. This soup is to die for! It's very creamy and rich. I omit the pimientos and cayenne pepper but follow the rest of the recipe. This is a fabulous soup.
