I had this recipe sent to me from a friend in Calgary that cooks for the elderly. I tried it and I would recomend it to anyone.
- Trim most of the stem of broccili and steam.
- Cut up in small pieces.
- Butter a 10 inch plate and put steamed broccoli on bottom.
- Cook onions and garlic in butter 5 mins.
- ,put over broccoli.
- Sprinkle with cheese.
- Beat the eggs, and add to eggs cottage cheese, salt, pepper, nutmeg and dill and pour over top.
- Bake at 375 30-40 mins.
- Cool 10 mins.
Loved the cottage cheese in this!! Never thought of adding cottage cheese in a quiche and loved it!! Used Costco precut broccoli and used dried dill (will totally make it with fresh next time!). Thanks ;)
This was very tasty and I enjoyed it. The amounts in the ingredient list are a bit vague - I used 1 1/2 cups of chopped broccoli and apprx 1 1/2 cups of chopped onions. For the cheese I used Lite Havarti and cut if back to 3/4 cup putting it on top for the last 15 minutes of baking. Very nice flavor. For the fresh dillI used 4 cubes of quick frozen chopped dill (4 tsps) It all came together well and easily serves 4
This was really good. I didn't make the recipe exactly as written though. I used what I had on hand. Ricotta cheese was substituted for the cottage cheese. I didn't have fresh dill. Instead of dill, I seasoned with some fines herbes. It was yummy! Next time I'll add some sliced mushrooms.
