This is based on one of my favorite Claudia Rodan recipes. You need good feta cheese for this. Serve with pita bread to dip in.

  1. With a fork, crush the feta cheese and mash with the lemon juice and the vegetable and olive oils until smooth.

I added a couple of dashes of basil and a little sun-dried tomato, and used some as a dressing for hot rotini.

One of the most unusual dips I have ever had - very nice indeed. I might even try this with bleu cheese.
