This is from TOH. I haven’t tried them yet, but I’m typing this up for the ZWT II. Makes about 1 dozen.
- 1 pint cherry tomatoes
- 4 ounces feta cheese
- 1⁄2 cup red onion, finely chopped
- 1⁄2 cup olive oil
- 1⁄4 cup cider vinegar
- 1 tablespoon dried oregano
- salt and pepper
- Cut a thin slice off the top of each tomato. Scoop out and discard pulp. Invert tomatoes onto paper towels to drain.
- Combine cheese and onion; spoon into tomatoes.
- In a jar with a tight fitting lid, combine oil, vinegar, oregano, salt and pepper; shake well. Spoon over tomatoes. Cover and refrigerate for 30 minutes or until ready to serve.
GREAT appetizer! I used green onions from our garden instead of red onions. I also put them under the broiler for a minute before serving. They were a big hit at our dinner party.
My sister made these for a family picnic. I don't normally like raw tomatoes, but these were fabulous! I had eaten about 9 before I realized what I had done! So I begged my sister to give me the recipe.
These were a very nice finger food for Dugan's poker party. Most of the guys had never had feta cheese before and really enjoyed it. Plus- I got to use cherry tomatoes from the garden. Nice recipe, dear. Thanks.
