I make this using the mexi corn and it comes out awesome. This recipe is very good and is a hit.

I made this and loved it! I just crunched the chili corn chips up a little and put them on top of the mixture instead of mixing them in. I believe the fritos stay crunchier much longer this way...and leftovers are still tasty!
This is really good. I used two 16 oz. bags of frozen corn, thawed and drained. I used probably closer to 1 cup of mayonnaise and I used the chili cheese Fritos. I recommend salt and pepper on the corn before adding it to the salad. At first I thought it might taste too bell pepper-ish. But that wasn't true. Somehow the flavors all melded together. Everyone liked this. Only one person said that he wished it had more spice to it. I would still make it again just like I did today.

This recipe has everything I like in it. For some reason, I wasn't as overwhelmed with it as I thought I would be. I used a light mayo. Maybe that was it. I also used vidalia since I had no green onion. I was still a great salad, but I'm missing something. I will make it again with the proper onion and real mayo. Thanks for the inspirational recipe!
