  • Drain canned corn. Dice peppers and green onion. Put in a large bowl and add mayonaise , you could increase this to 1 cup and cheese. Just before serving add the Fritos. The recipe calls for chili cheese Fritos.

  3. I made this and loved it! I just crunched the chili corn chips up a little and put them on top of the mixture instead of mixing them in. I believe the fritos stay crunchier much longer this way...and leftovers are still tasty!
     
  4. This is really good. I used two 16 oz. bags of frozen corn, thawed and drained. I used probably closer to 1 cup of mayonnaise and I used the chili cheese Fritos. I recommend salt and pepper on the corn before adding it to the salad. At first I thought it might taste too bell pepper-ish. But that wasn't true. Somehow the flavors all melded together. Everyone liked this. Only one person said that he wished it had more spice to it. I would still make it again just like I did today.
