    Directions:

      Remove any rinds from hard cheese. Grate hard cheeses and cut others into 1/2" cubes. Place cheeses, wine, butter, garlic, anf parsley in food processor and blend until smooth, approximately 2 minutes.

      Serve immediately, or refrigerate for at least 1 hour for a firmer consistency. Store in fridge for up to one week.

      I use this whenever the cheese drawer gets too full of little bits and pieces! It looks so upscale when served to guests, they'll never know it's actually leftovers. LOL! One note of caution, if you use a really strong flavored cheese, make sure you have enough mild ones to balance the flovor, or you may find it too sharp.

      I just made this cheese tonight and it is great! This cheese mixture is so easy to put together...I didn't have to measure or weigh out anything. I just eye-balled everything. I used sharp cheddar, parmesan, cream cheese, and american cheese. I also used an asian sake instead of wine. I also added extra garlic...which gave it an extra kick! I was shocked when my picky husband asked me if we could have some of this cheese dip with our meal! This dip is terrific! You really won't find a better cheese spread in the market...
