  • Boil potatoes in salted water until tender.
  • Drain and peel when cool enough to handle.
  • Boil garlic with potatoes until soft.
  • Remove and peel.
  • Mash potatoes with garlic, cream, butter and cheese.
  • Stir in scallions.
  • Spoon into buttered casserole dish.
  • Run under the broiler until golden-brown on top.

  1. This recipe does have it all. Everyone enjoyed this including my toddler who was wanting to be difficult and who eventually succumbed and who then couldn't get enough :-D! I used feta for the cheese. Dead easy and very yummy.

  4. These are the most awesome mashed potatoes EVER!!!! They're exactly as decribed.... rich, creamy, tangy and yummy! I chevre cheese. It was heavenly! I garnished with some extra chopped scallions (green parts). Thanx for sharing this recipe. It's a keeper!
     
  5. This is a wonderful dish. Followed the recipe using ff half and half and chives instead of scallion. The beer can chicken and salad were ready, so we did not run under the broiler - still fantastic. Leftovers will be perfect for potato croquettes or shepherds pie. Thanks Evelyn.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
