But using a panini press is lovely. I buttered the outside of both of the 9-grain bread slices, evenly distributed (a quarter inch? maybe) of mexican-style finely shredded cheese (monterey jack, mild chedder, queso quesadilla and asadero cheeses--I used Kroger brand). Used a nicely-ripe roma tomato, cut to cover--pretty much completely--the cheese. This is so easy and really delicious.

The grilled cheese sandwich just grew up. Made for a quick and tasty lunch. DH loved addition of tomato to his grilled cheese. Made as written using a Roma tomato as that is what I had on hand. Thanks so much for the post.

Lainey this grilled sandwich was delicious. I love grilled cheese, they are my special weakness. These certainly do not disappoint. I used a lovely crusty european bread and old aged balderson cheese...so good. Thank you so much for sharing your quick and easy to make treat. I will be making this again.

I made it as a late night snack for us and we all enjoyed them. I've made this with American cheese many times before so trying it with cheddar sounded interesting. Both ways are great and so next time I may use a combination of them both. :)

What a yummy sandwich!! My cheddar turned out to be moldy, so I made it with provolone. This would be really good with some bacon. Yum!!

I made these for DH's lunch today...I used some leftover tiger bread and some tomatoes that were going soft,along with some really good 12 month aged cheddar.He thought they were great!! An easy,tasty and great way of utilising bits that need using up. Thanks Lainey..you are queen of sandwiches! Made for 1-2-3 Hits.

These are sooooo good! Super simple to put together. I used hamburger buns that I had just picked up from the bakery. I lightly butter the outsides of the bun and cooked it in my grill pan. I made one of these for dinner, and loved it so much, I had to make myself another one. Thanks for sharing, Lainey. Made for March, 2009 Photo Tag.
