  1. I have never liked pimiento cheese spreads from the store, but I just knew it would be good if homemade. I cut this recipe in half because I wanted to be sure my family would like it also. We enjoyed it a lot. It was good spread for a sandwich, or on bagel crisp chips. I did use garlic powder in place of the mashed garlic. The only thing I will do differently next time is add a smidge more (equal parts) of the mayo and sour cream-just a little. The spread didn't "stick together" as well the 2nd and 3rd days as it did the 1st day. However, overall we were very pleased. Thanks for sharing!

  2. Yummy Yummy... we love it just like this. But for a little change... add horseradish ( from a jar) and bacon bits... stir together... put in frig. about an hour.. then spread on crackers..so Yummy.. Bacon Horseradish dip.. good for veggie tray also.

  3. Really good! It made too much for me, though. Next time I'll half the recipe. I used a combination of low fat/fat free ingredients and it was JUST FINE for a toasted sandwich! Very fine!

  4. Outstanding, Recipe Fairy. Had home-grown pimentos from my garden that I roasted, diced and added. Made this recipe into "chunky" spread. Excellent! Will try grilled sandwich for lunch! Thanks for posting.Caroline
