Low Carb Mediterranean Stuffed Bell Peppers

  • Cut tops out of the green peppers and remove any seeds or membranes.
  • Blanch peppers for 5 minutes in salted boiling water, or you may place these in a microwave-safe pan, add 1/4 cup water, cover and cook for 5 minutes on high until softened.
  • Meanwhile, brown ground meat and onion in oil, add spices.
  • When meat is almost cooked through, add chopped tomato.
  • When meat is cooked through, allow to cool slightly then mix in the yogurt and lemon juice.
  • Place peppers in a baking pan and fill peppers with mixture and top peppers with feta and parmesan cheeses.
  • Cover baking pan with lid or foil and bake at 350F for about 15 minutes.
  • Remove lid or foil and cook about 10 minutes more.

  3. My husband and I liked this a lot! I am not fond of rice in stuffed green peppers so this was a great find. I did add one third of a can of tomato soup to the meat mixture and poured the remaining two thirds of the soup over the stuffed green peppers. The measurements of the seasonings was perfect. Oh, I did use ground turkey.
     
  4. This was a good recipe. I made 4 stuffed peppers and used ground Recipe #275998 instead of meat. I was unable to find a 4-5 oz. container of plain nonfat yogurt, so I used a lowfat french vanilla and it worked out fine. I also left out the cheese. Tasted great, thank you!
     
  5. I Love Greek food these are wonderful! I used ground lamb blanched the peppers 15 minutes added fenugreek, a half teasooon . Instead of fresh I used a half cup dried tomatos in olive oil instead of salt used greek season salt you gotta try these Yum
