  • Preheat oven to 350 degrees F.
  • Spray 8 (8 oz) baking dishes (I used custard cups) with Pam and place dishes on a large cookie sheet.
  • Cook macaroni according to package directions, drain.
  • In a large saucepan melt 2 tablespoons of the butter over medium heat. Stir in onion and cook for about 5 minutes or until softened.
  • Stir in flour cook for another minute, stirring occasionally.
  • Whisk in milk. Increase heat and cook whisking occasionally until thickened (3-5 minutes).
  • Whisk in cheeses, salt and pepper. Cook, stirring occasionally until cheese melts (1 minute or so). Remove from heat.
  • Stir in macaroni and tomatoes.
  • Divide mixture among baking dishes.
  • Melt remaining butter (1 TB) in pan over medium heat, add bread crumbs and stir until coated (1 minute). Sprinkle bread crumbs over the mac n cheese.
  • Bake for 25-30 minutes or until casseroles are bubbling.

  1. Mmmm-yummy. I loved the inclusion of the parmesan in this recipe,it gave it a really lovely depth of flavour. Unfortunately,I forgot to add the tomatoes,but it certainly didn't affect our enjoyment of this dish-plates were scraped clean! Thanks for sharing.

Made this with the intention of keeping it here for the 2 of us, but my good intentions got the better of me, & we shared it with our mac-&-cheese loving neighbors! & I found this to be a very nice twist on the usual M-&-Cs, what with the whole wheat macaroni & the whole-grain breadcrumbs that I used on top! <p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
