I use all red green and yellow with Pepper Jack cheese minced about 8 cloves of garlic and browned it with the meat and mild salsa. Thank you for sharing

I used 2 c. cooked brown rice, then added it in with the other ingredients, and used Pepper Jack cheese instead. I baked them in the oven for 1 hr 10 minutes at 350 instead of using the crockpot. These are delicious. Very simple to make and I love that they can be made in the crock pot version. The peppers were easy to stuff, too, since they were not cooked yet. They softened up really nice in the crock pot, too. Thanks for sharing! Made for Gimme 5 tag.

Yummmmy. I used herdez salsa (our numero uno favorite) and forgot to put the remaining cheese on the top, and FYI I didn't have any instant rice, so I used brown rice and just cooked it a few minutes longer prior to adding to the crockpot. DH raved about it! Looks like we've got another Boomette recipe on our list for favorites. Tagged in 123 and soooooooo glad I did.

SUPER YUMMY! I wish they made some sort of sauce to serve over rice but it didn't matter...they were loaded with flavor and were very delicious! I served these alongside Easy Chicken Quesadillas and it was the perfect pairing. Can you believe my 2 and 4 year old ate them both all up??? I used ground beef and mild salsa...I also minced about 8 cloves of garlic and browned it with the meat. VERY happy eating tonight. Thanks Boomette!

These peppers were terrific! So very flavorful and spicy. This was and easy to make and hearty meal that I will definitely make again - thanks for sharing the recipe!

I had never done peppers in the crock pot before. They turned out great. I dont think next time I will use quite as much water though. I used lean ground beef, homemade salsa, and pepperjack cheese for a little extra zing.
