- 8 hard-boiled eggs, peeled
- 59.14 ml chopped smoked salmon
- 14.79 ml butter, softened
- 14.79 ml sour cream
- 44.37 ml grated swiss cheese
- 2.46 ml dill
directions
- Cut the eggs in half lengthwise.
- Remove the yolks and set egg whites aside.
- In a bowl, mash the yolks. Add in the chopped smoked salmon, butter, sour cream, cheese and dill; mix together well.
- Stuff the egg whites with this mixture.

These eggs were terrific & another 5* from me too, *Parsley* :-) I made a half recipe for 2 of us as written & felt the mixture was a bit dry so I added a sml amt more of the butter & sour cream, but that may have been because my eggs were quite lrg. To add a color variant for the pic & dress them up a bit, I topped them w/3 sml capers & a tiny sliver of smoked salmon. W/eggs hard-boiled as the start, they take only minutes to make & are a new way (but classic as well) to enjoy our wealth of smoked salmon here in Iceland. Made for Photo Tag & thx for sharing this recipe w/us.
