Philly Cheddar Grilled Cheese

- 2 tablespoons unsalted butter, softened
- 2 cups mushrooms, sliced
- 1⁄2 teaspoon horseradish
- 4 slices white whole grain bread
- 2 ounces thinly sliced sharp cheddar cheese
- 2 ounces thinly sliced roast beef
directions
- In skillet, melt 2 t of the unsalted butter over medium heat.
- Add the mushrooms and cook about 6 minutes.
- Stir in horseradish.
- Remove mixture from skillet; wipe clean.
- Place 4 slices whole-grain white bread on work surface.
- Using remaining butter, coat 1 side of each bread slice.
- Turn 2 slices over; divide 1 ounce of the cheese, 2 ounces of the roast beef slices and mushrooms between slices.
- Top with 1 ounce of the remaining cheddar cheese.
- Top with remaining bread slices, butter side up.
- In same covered skillet over medium heat, cook 4 minutes, turning once.

Deeeeelicious!! I skipped the horseradish (had none) and like Pat,seasoned it well with black pepper.It was completely yummy.I just loved the gooey melted cheese,combined with the mushroom and beef.A great combination of flavour and texture. Next time,I think I'll try adding a little wholegrain mustard to the mushrooms,as they cook.A very different way of making a toasted sandwich too ( us Brits do it under the grill,rather than on the stovetop),but totally enjoyable,making a very pleasant change.
