These are the simplest appetizer and are always a huge hit. No one can ever believe that they're so easy to make. You can substitute the raspberry jam for a different flavor jam or even top off with a bit of brown sugar and pecans.
- 1⁄3 lb brie cheese (double cream if you can get it)
- 30 miniature phyllo cups (2 boxes)
- 1⁄3 cup seedless raspberry jam
- Preheat oven to 350°F.
- Cut brie into 3/4 inch cubes and gently press one cube into each mini phyllo cup.
- Top each cup with a dollop of jam.
- Bake for 15 to 20 minutes.
I tried this recipe a couple of ways. It seemed to be lacking a little zip with the brie, so, since I had some, I tried them with cream cheese. The cream cheese added just the right zip with the raspberry. But, I also tried some with lime curd and some with orange marmalade, which were both delicious, but the strength of the flavor of these two masked the extra zip. The zip to counter the sweetness probably isn't necessary with a less sweet fruit. In any case, they are really good and very easy!
I followed the recipe exactly - using double cream brie and raspberry jam, and they were a huge hit at girls game night. The flavor is very mild. I might try cranberry sauce next time as one reviewer pointed out to give it extra zing! I liked that they were equally good right out of the oven as they were 20 minutes later when just warm. These are wonderful. I have made them many times. My favorite is to use whole berry cranberry sauce. I love the combination of brie and cranberries. And I have tried making them with other types of crusts, and nothing is as good as the phyllo cups.
