the traditional slate caprese is one of our favorites. We usually try it at every resturaunt that has it. The simplicity is beautiful. I'm found your version this morning while looking for a quick easy, LAST minute dish for a potluck. Thank you! I already know this is a winner without even trying it. The key is good olive oil! I made this yesterday since I have so many tomatoes. It was very nice, but my daughter suggested I add a little balsamic vinegar for extra flavour, which I did. That made a nice difference. This recipe was very easy and quick to make. Thanks, MissNezz for a good recipe.

I loved this! This is a great way to use homegrown tomatoes. The basil and oregano really bring out the flavor of the tomatoes and mozzarella. I'll be using this recipe all summer long. Thanks, MizzNezz!
Very good! But I left out the sugar, no need for it with fresh herbs and tomatoes! Especially good after it sits overnight so the herbs get a chance to really get into the cheese and tomatoes! Thanks for the recipe!
Excellent and refreshing. I would only make this with garden grown tomatoes and fresh herbs. The aroma itself is satisfying! Thanks for posting.
How can you go wrong with this one if you use good quality ingredients. I did use dried herbs knowing it would be much better with fresh. I liked one reviewers idea of letting it sit overnight in the refrigerator to infuse the herbs with the cheese. I used pretty good tomatoes, would like to use ones from the garden next round, a good Italian mozzarella, sea salt, freshly ground black pepper, unrefined extra virgin olive oil from the health food shop plus the sugar. I will make this again with the best quality ingredients including fresh herbs of course!
