Tortellini With Cabbage, Onions & Mushrooms

- 16 ounces cheese tortellini
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 3⁄4 sprig fresh rosemary (can use dried)
- 3 1⁄2 cups napa cabbage, thinly sliced
- 4 cups white button mushrooms, quartered
- 1⁄4 cup green onion, chopped
- 1⁄2 cup white wine
- 2 cups chicken broth
- 1 tablespoon butter
- 1⁄2 cup parmesan cheese, grated
- 1 cup mozzarella cheese, shredded
- 2 tablespoons fresh parsley, chopped
- salt, to taste
- fresh ground black pepper, to taste
directions
- Cook pasta according to package directions.
- Meanwhile, cook the garlic in a skillet with olive oil and rosemary and saute for 2 minutes over medium heat.
- Add cabbage, mushrooms and onions and saute for 5 minutes.
- Add wine.
- Continue cooking until the wine has evaporated; add chicken broth and simmer for 10 minutes.
- Drain pasta and toss with butter and sauce.
- Add the cheeses, parsley, and salt and pepper, to taste, and toss again.

I cut the recipe in half since it would have been too much for the two of us. I liked the addition of veggies, a whole meal in itself, served it without anything extra. Made it just as stated and would perhaps only decrease the parmesan cheese next time. Made for RSC# 14. Thanks for creating and posting.

This is definitely a 5 star!! Love the hint of rosemary in the dish. I also cut the dish in half since it's the 2 of us and hubby is taking the leftovers for lunch as salad today. (By the way, it's great! Had to sneak a bite this morning). So you actually have 2 meals for the price of 1. Very good. Good luck in the RSC contest.

I loved the cabbage and mushrooms which made this savory and satisfying. The tortellini and cheese made it yummy. I did half the recipe as it would make so much for just two of us. This is a good non-meat meal in itself. Served with a wedge salad and bread sticks. Lovely! Good luck in the RSC contest!
