Who knew that curry and tuna would meld so well together? I used a lemon and pepper tuna and dipped it with roasted garlic italian bread. Serve this on crackers, stuffed in a tomato, or in a sandwich. I found this recipe in Potlucks, Parties, and Barbecues/Taste of Home from Dorothy Anderson of Ottawa, Kansas. Double the recipe if serving a crowd or just enjoy for lunch.
12/5/09 I made this again today (I came across the recipe again on another website), and I doubled the amount of tuna and added some lemon pepper and a can of garbanzo beans. I would add cucumber if I had some. YUMMY! More of a lunch than a dip. I enjoyed it on Ritz Crackers, but feel free to have it as a sandwich filling, stuffed in a tomato, or with carrot and celery sticks.
I saw this recipe when it posted and knew I had to try it. I took it to a friends 50th birthday party and served it with buttery crackers and it was a huge hit. I doubled the recipe so there was a bit leftover so I had it on bread for lunch today and it was even better today. This will be a regular for me for sure!!
