Easy peasy! I love it! I've never been a fan of V8 but had some on hand for a 'tomato tea' I'd been drinking while sick. I wanted to try something a little different to finish off the bottle I had open and this was perfect. I did pick a little basil from my garden to chop and add. I had pretzel slim crackers on the side...I can't wait to try again with some of the recommendations noted! Thanks!

This was a nice dinner with a grilled cheese, and I would've never thought of it, either! I used Spicy V8 - which, oddly enough, ended up being WAY too spicy for me, and I'm a spice fiend. Maybe I got a zippy bottle. I added some milk, reheated, and it worked just fine. :)

I used Spicy Hot V-8, and some shredded mozzarella. This was so simple and really tasty. I had this with a sandwich at lunch today, and was pleasantly surprised by it. Like Andi said, I can't believe I haven't thought of doing this before! Great idea! Made for Everyday is a Holiday tag!

Who knew? Who knew? This is such an easy little recipe, with so much bang. I used spicy V-8, fresh mozzarella, and was absolutely delicious. I even added a pinch of red pepper flakes to the top. I have obviously been hiding in a ground hog hole, as I would of never even thought of warming up V-8, although I confess to using in other food items. These are the kind of recipes and methods I absolutely love, as it just seems like I should of thought of this before. Thank you Marra, for you showing me the way to a delicious, filling, and quite lovely soup on this late afternoon in the Fall 2008. Made for *Everyday is a Holiday*

I have heated my V8 in the past but it never occurred to me to put it in a bowl and add cheese. I added some mixed herbs on top. This was a warming and pleasing lunch. My cheese promptly sank but it was kind of fun scooping up spoons of it with the V8. A perfect lunch or light dinner with a biscuit on the side. Thanks Marra for a great base idea.

Cannot wait to try this, love V8 but suggest the low-sodium version as a healthier alternative. Thanks for the recipe.

I almost passed on this recipe because-well, I wasn't sure how I felt about V8! I love healthy food but I never thought I liked V8. This was absolutely fabulous! I used a small can for a single serving-added 1/16 tsp garlic powder, onion powder & black pepper, then 1/4 tsp worch sauce. I only used about 2 tbsp reduced fat mozzarella. I simmered it on the stovetop for about 5 minutes, then sprinkled with a little parmesan. I had added a few whole grain croutons, but I actually prefer it without! It's perfect with a sandwich. I will have this again for sure & thank u for sharing!!

This is a wonderful soup. I made it for my daughter and her kids and everyone gulped it right down and asked for more! Next time we will try it with croutons and broiled as Kizzikate suggests. Also, I tried it with cheddar instead of mozarella, also very good. Thanks MarraMamba.

Wow I had never thought about using V-8 as a soup. I was great a lot better flavor than regular tomato soup. I added a bit of black pepper also and a dash of hot pepper. I served mine with goldfish crackers. It was an excellent snack in just a couple minutes in the microwave. Oh I didnt heat it to boiling but rather stopped just before it started boiling. It still worked fine but the cheese didnt melt as fast.

Makes a nice, easy lunch or snack. I frequently drink hot V-8 juice in the winter. Never had it as a "soup" though. I added some black pepper to mine. I think Spicy V-8 would be even better. Thanx for sharing this!

I am so glad to see that someone else loves V8 hot like a soup like I do! I love homemade tomato soup and this is the quickest and easiest soup of them all. I hate canned tomato soup b/c they are all kind of on the sweet side and V8 to me is just the right balance of tangy and savory. Thanks for sharing and proving to my BF that I am not the only 'crazy' one!!!

I wish I could give this simple soup 10 stars! This is fun to play around with- I added a big dash of Worchestersire, and added some croutons for crunch. Topped with the cheese, then ran under the broiler, just like French Onion soup. YUM!!! This is too simple to be so good!
